Abstract

Belonging to omega 3 fatty acid class, α-linolenic acid (ALA) is considered as essential because it can not be synthesised by human organism and must be provided by diet. Plants are important sources of such ALA. From fruits, seeds to green vegetables, this survey will tend to show the relative importance of plant material for providing ALA. Special attention is paid to food-industry progresses and to the potential future developments.
