Abstract

Furan is a possible human carcinogen with major occurrence in coffee. This chapter aims to estimate the exposure of consumers to furan. The furan content of coffee was taken from previous chemical analyses. The intake of coffee beverages was taken from the representative second national nutrition survey in Germany, as well as based on estimations for individual coffee consumers drinking one to eight cups of coffee per day. The furan exposure was probabilistically estimated combining the chemical data with the dietary intake data. For the whole population, the average furan exposure due to coffee intake is 0.26 μg/kg body weight (bw)/day, whereas for consumers the average exposure is 0.12 μg/kg bw/day per 200-ml cup of coffee. The margin of exposure would be 19,112 for the whole population, and 8426 for drinkers of five cups of coffee per day, which is lower than the low-risk threshold of 10,000.
